Butterfly Pea Lemonade | Nam Anchan Manao | น้ำอัญชันมะนาว
This magic color-changing lemonade made with butterfly pea flowers is the coolest drink. Simply mix butterfly pea tea with lemon juice and watch the color change from dark blue to bright magenta!
Bring 6 cups of water to a gentle boil, then take off the heat.
Add 1 cup of sugar and ¼ cup of butterfly pea flowers. Allow to steep until the water is dark blue and the sugar is completely dissolved. Cool to room temperature, then chill until the butterfly pea tea is cold.
Pour 1 cup of the butterfly pea tea in a glass filled with crushed ice.
Add 2 Tablespoons of freshly squeezed lemon juice. Stir and watch the color change from blue to magenta. Enjoy!
Layered Effect Lemonade
Bring 6 cups of water to a gentle boil, then take off the heat. Split the 6 cups into two 3 cup portions.
To one of the 3 cup sections, add 1 cup of sugar and stir until dissolved. Allow to cool to room temperature. Once cooled, add 1 cup of lemon juice to make a concentrated lemonade.
To the other 3 cup section, add 2 Tablespoons of butterfly pea flowers. Allow to steep until the water is bright blue. Strain out the flowers.
Add crushed or pellet ice to fill a glass. Add ½ cup of the concentrated lemonade. Slowly and gently pour ½ cup of blue water on top to see the layered effect. Stir together before drinking.
