Thai-Spiced Cashews

Would it surprise you if I said the boyfriend and I aren't planning on watching the game today?  I know, I know... me, a girl from Louisiana who grew up watching football; him, a boy dedicated to all things San Francisco.

But, last year, we discovered something that we like to do even better than watching the game on Superbowl Sunday.  And that is playing golf on Superbowl Sunday 🙂  Yes, while everyone else is at home glued to their TVs, we get to enjoy the entire golf course all to ourselves!  It's fantastic really - no groups ahead of you to slow you down, no one behind you to hurry you along - just the two of us enjoying the outdoors - and occasionally popping into the Club House for the score.

Just because we won't be watching the Superbowl at home doesn't mean we can't enjoy Superbowl snacks though.  I'm planning on making these Thai-inspired cashew nuts to bring with us to the course.  They're very simply roasted cashews coated in chili and finely sliced kaffir lime leaves to give a nice pop of lime and heat in every bite.  A perfect snack, if you ask me.  And if you are planning on watching the game, these cashew nuts go wonderfully with beer.

Thai-Spiced Cashews

Ingredients

  • 2 cups raw cashews
  • 2 Tablespoons canola oil
  • 1 teaspoon salt
  • ½ teaspoon sugar
  • ½ teaspoon dried chili flakes
  • ½ teaspoon kaffir lime leaves sliced finely

Instructions

  • Heat oil over medium heat. Add the raw cashews and cook in the oil until they turn golden brown.
  • Pour the cashews onto a cooking sheet so that they can cool in a single layer for a minute or two.
  • Sprinkle the Thai-inspired spice mixture on the cashews and stir until they are well coated. Enjoy!
